Beefy Louisiana Yellow Rice w/ Vegetables
Today I am using the left over ground beef and vegetables with yellow rice I had frozen for another dinner.
Here is what I made:
Beefy Louisiana Yellow Rice w/ Vegetables
Ingredients:
1/2 lb. ground beef
1/2 medium onion, diced
1/2 medium red bell pepper, diced
1 stalk celery, diced
1/2 package Virgo yellow rice with saffron
4 cherry or grape tomatoes sliced in half
4 mushrooms chopped
Directions:
Brown ground beef in 12-inch nonstick skillet over medium-high heat, stirring occasionally; drain.
While browning the beef cook the rice it takes twenty minutes with very little effort.
When the rice and beef are ready combine the beef mixture with the 1/2 of the rice.
I like to serve this with grape tomatoes on the side
I love saffron and this Virgo product that I buy at the Dollar Tree.
If you prefer to make yellow rice with out the saffron that's OK it is your choice its about you and what you enjoy eating.
However you make it I know you will enjoy this easy and affordable meal!
