Shrimp Scampi Salad
Today I made a version of shrimp scampi. I needed a recipe that would use up more of the things I had in the refrigerator.
I do need to use up what is in the refrigerator but I refuse to compromise and expect to get a lot of great meals from the refrigerator and the freezer.
I found this recipe and it fit what I needed.
Here is the recipe:
Shrimp Scampi Salad
1/2 pound of Small to Med Shrimps
12 Teas of garlic chopped. (use the jar garlic from the dollar store it will not even use half the bottle)
1/4 cup of butter (that is half a stick)
1/4 cup of cream ( I used milk I am not buying anything that goes into the refrigerator)
Directions:
This is so simple!
Get out your frying pan and put the butter in it.
Next add the garlic
Let the garlic get a light brown but don't burn it
Next add the shrimp
Stir in long enough to warm the shrimp though
Finally add the cream
I used this over a salad. I had a bag of salad I need to use up so that was my choice and it was great.
You also could use this over rice.
Either would be good.
