Mexican Meatloaf
I know I said no Mexican food made here and it still is true.
This is an American version of a Mexican Meatloaf.
You can make this meatloaf and serve it in tacos if you would like on a green salad and tomato base topped with some more salsa.
You can also instead of crackers use taco chips and add some green chili's
to take this up a level.

Mexican Meatloaf
Ingredients:
1 pound Ground beef
1 Egg
1/2 cup Ritz Crackers
1 package TACO SEASONING ( 2 Tablespoons Taco Seasoning)
1/2 onions & peppers (frozen package)
Sea Salt & Fresh ground pepper to taste
shredded Mexican Cheese
3 ounces Salsa
Preparation:
Combine hamburger, egg, cracker crumbs, and taco seasoning and mix well.
Place half of the meat mixture into loaf pan.
Spread with thin layer of salsa
Then place remaining half of meat mixture on top of that.
Top with cheese then top off with generous amount salsa
Bake in 375 oven for about 35 min.
Remove from oven and top with with cheese
Then return for appox. 10 more min. or until it's done.
I like to surround the meatloaf with pieced of bread. The bread tends to soak up the grease from the meat.
Serve with potatoes or rice and a green salad.
