I am using my phone to write this blog entry. I am going into withdrawal not being able to write. Plus I have moved and the move was a major one. I have been here for three days and now I am living in Artesia, NM. Everyone here is interested in what I cook because I cook Italian and African food and they want to learn hoe to make it.
Also all my new neighbors are determined to get me not only to eat Mexican foods but to make it. I told them good luck lol I don't like Mexican food. They tell me I just have not had the real thing. OK we will find out.
I did make my first meal in my new home and I did decide on African. Since I am starting over I wanted to make a family favorite and my mom's favorite dinner so I made Biafin Stew.Also all my new neighbors are determined to get me not only to eat Mexican foods but to make it. Here is how to make it:
Biafin Stew
Ingredients
1/2 lb beef stew
1/2 lb boneless chicken
1 can stewed tomatoes
1/2 onion
1/2 green pepper (I used 1 banana pepper)
8 drops of Franks Red Hot sauce
Salt and pepper to taste.
Directions
Layer all of the ingredients in a crock pot or a stew pot.
I prefer the crock pot just because its not only easy.it cooks slowly and all the flavors blend together nicely.
The original recipe calls for this stew being served over cous cous or rice. I prefer to eat it like stew with a big piece of crusty bread.
The dinner turned out great. Since every one wants me to teach them African cooking maybe I will offer a class.
But for now I will concrntrate on getting settled.
