Corn Relish The Easy Way
I went shopping yesterday and had two things on my to get list.
The first was fresh Fennel. That is impossible to find in NM. I asked the produce manager if he could try carrying it and he said he would look into it.
I don't hold out much hope but then another customer came up to me when he left and said I heard you were looking for fennel You will never find it in the area but you can get it in Carlsbad or Roswell. I will have to talk my neighbor into go to one of these places. I know she will drive because no one wants to take a chance in my old beat up mini van.For now I went to the spice area and bought dried fennel. It was outrageous in cost it was almost five dollars! Was it worth it? Yes for me it is. I make Italian food but I make Corsican Italian which does call for a lot of fennel. Today I will be making a Corsican Pizza that I will share with you this week.
The next thing I wanted to find was corn relish. That should be pretty easy to find right? Wrong.
Walmart does not carry it and when I stopped at Finns a grocery store in Atresia it was so expensive I decided that I would just make it.
Years ago when the family was alive I always made corn relish among other things that I canned for my family and friends to enjoy.
I am older now and not as ambitious as I was back them so I had to find a recipe that was inexpensive, fast, and easy to make.
Of course I found one and I intend to make it this week.
Here is the recipe:
Corn Relish The Easy Way
Ingredients:
1 (10 oz.) pkg. frozen corn, thawed
1 c. finely chopped sweet pepper
1/2 c. finely chopped onion
1/4 c. pickle relish
1/4 c. finely chopped celery ( I don't use celery because I only like it raw)
1/3 c. white vinegar
1/3 c. vegetable oil
1 tbsp. sugar
2 tsp. prepared mustard
Directions:
1. Combine vegetables and set aside
2. Stir together remaining ingredients and boil for 1 minute.
3. Pour over vegetables; stir well.
4. Cook over simmer for thirty minutes
5. Refrigerate, covered, overnight. Stir occasionally.
6. Spoon into what ever container you are using and refrigerate.
That's all there is too it!
There are really no rules to making this relish.
For example I have frozen corn and frozen chopped onions and peppers which is what I will use.
The next change in my relish is I will take the time to put sweet pickles in the food processor instead of using relish. I personally prefer the taste this way its up to you which one you do.
Thats about it and I will save a good fifty percent or more of the cost of corn relish I can buy in the stores.
I do like saving money!
