Deep Dish Corsican Pizza The Easy Way!



Today was super busy and then last minute my neighbor brought her dog down to meet my cats. It went pretty well I was proud of all of them. I think down the line the dog will begin spending time here.
My neighbor asked me if I would consider coming down and staying with her dog while she went to work. She works for a church three times a week and is only gone two or three hours. 
I know it was hard for her to ask but she is at her wits end. Her dog is suffering such separation amity when she leaves that she believes it is affecting her dogs health.
She has lived here only two months and I have lived here a month but we hit it off from day one and her dog took to me as if he had known me his whole life. I love her too she is a Carin  Terrier and looks so much like my old dog I fell for her right away.
Anyway she though that since her dog was so fond of me it would help if I stayed with her while she worked.
That made tonight's dinner a challenge. I had leftovers I wanted to use up in a creative way and I had found a really easy and fast way to make a deep dish pizza with a Corsican twist. 
I figured what the heck I had an hour and a half before I needed to be at her house so I decided to give it a try.
It turned out so good I could not believe it
Here is what I did and I will explain why I did a couple things in this recipe  after I give you the recipe.

Deep Dish Corsican Pizza The Easy Way!


Ingredients:

1 can pop open rolls like Grands
1 small package of pepperoni
1 small can of black olives
1/2 onion
1/2 pepper
1/2 roma tomato
1/2 small jar of spaghetti sauce
1/2 cup of shredded Italian cheese
1/4 tablespoon or fennel

Directions:


1.  Heat over to 400 degrees

2.  grease and flower a pie pan

3.  cut up each roll into six piece 

4. place each piece of roll in the pie pan
     do not press down

5. top the pieces of rolls with the pepperoni,  olives,  and vegetables. Lets pause here.
 You don't have to use the vegetables I put    into the recipe. Use what you have on hand  and enjoy on a pizza. The same goes for the  meat use what you have or again what you  like on your pizza.

6. now top with dabs of tomato sauce  you have added fennel to. Fennel takes the sauce to a different level. If you have never tried it you might like it. Fennel is a member of the celery family and has a anise flavor.Anise is used a lot in French and Mediterranean recipes. Take a tablespoon and drop the sauce in piles around the pan on top of the pizza filling

7. top with cheese. Again use what you have and what you enjoy. I used shredded Italian cheese.

8. Place in oven for 40 minutes check. If the cheese is not melted and slightly browning leave in oven another five minutes.

I said earlier I would explain a couple things in the recipe. I think most people know why I spray and flour a pan but for those who don't let me explain. 
If you spray a pan it will help keep the pizza from sticking if you also lightly flour it you will have a much easier time getting the pizza out of the pan.
Next why do I say cut up the rolls?
The reason is less obvious but will make sense.
If you cut up the rolls into smaller pieces and just lay them in the pan and you don't press down then the bottom layer what we are calling the crust will be able to allow the air to circulate as it bakes in the oven and crisp up.
Finally do you have to use fennel? No of course not I used it because I was raised in a first generation Italian neighborhood and the people who taught me to cook were a mix of Corsican and Roman decent. I took to the Corsican way of cooking because I loved the flavors. So if you do  not like this flavor leave it out but you may want to replace this with some Italian Seasoning.

That's it your done!
I though this pizza was a five star success!
I loved it enough that tonight for dinner I am going to make a toss salad and reheat the pizza in the oven. I have half the pizza left Iso I will be able to separate the pizza a little in the pan and allow it to brown a little and get crispy. 
For those who like cold pizza this is a great snack! I grabbed a couple pieces when I got home from puppy sitting and love it cold!
