ICED SAD BUNT CAKE WITH PECANS  


Today while I was outside feeding the birds and watering my plan my neighbor asked me if I liked pecans. 
I said yes I love them. She said she can not eat them and they had been hand picked by her friend and if I would like them she would give them to me.
I said yes of course and came in and tried to find an easy recipe.
Lets face it I am not a chef I am a survival cook like you but I wanted to make something and it had to be fast, inexpensive, and of course easy to make.
I was looking for something with pecans when the name of this cake caught my attention.
I read several versions then came up with my own using the pecans.

This is what I did:


ICED SAD BUNT CAKE WITH PECANS  


Ingredients:

2 c. Bisquick
2 1/2 c. brown sugar
4 eggs
1 tsp. vanilla
1 c. chopped pecans
Mix well the Bisquick, brown sugar, eggs and vanilla with a spoon. Add pecans, mixing well. Pour into a greased and floured 9 x 13-inch baking dish.
Bake at 350°F for 25 to 30 minutes or until toothpick comes out clean. Cake will usually sink in the middle.

Icing:

2 Tablespoons of butter

1 cup confectioners' sugar
1 tsp. vanilla

1. I found this recipe but when I read it it said that the center usually sags.
If it is not good in a cake pan and I don't want the center to fall in why not put it in a bunt cake? So that's what I did. If it does sag then it should sag all away around and it will look like it was what I meant to do
2.I buttered and floured the bunt cake and put it in the over at 350 degrees for a half hour.
3. If you do this make sure a toothpick comes out clean before removing from the oven.
4. While the cake is still warm put the icing over it and top with additional pecans.

When I took the cake out of the oven there was a little depression all away around like I though it would be.
I took a small piece and tried it.
I liked it and if you like pecans I believe you will too.
