Here I am in NM and I feel I should do some cooking that represents where I live. OK that's just an excuse. I was craving chili and decided to make some today.
I have noticed the chili you can get here is hot hot hot!
I don't do hot. I like lots of flavor and I am not opposed to spicy.
So in honor of NM I came up with a new recipe that is a little more NM than NY.
Here is what I did:

Spicy Chili NM Style

Ingredients:

1 can bushes chili beans in chili sauce (yes its worth getting)
1 small can tomatoes I use stewed
1/2 package of chili mix or spices 
handful of banana pepper rings.
1/4 to 1/2 pound ground beef.

Directions:

line a crock pot
add the ingredients 
Allow to cook on high for about 3 hours

I know you noticed I did not say brown the ground beef. I have a reason.
I believe you brown the ground beef if the beef is going to be showing and you want the color that's not what chili is about.
I put it into the crock pot raw and allow it to cook along with all the other ingredients.
My reason for this is simple. We have been following directions of wise chefs for a long time and for a long time I browned the beef. 
I noticed you really leave the flavor in the pan when you do this.
When I cook the beef with the rest of the ingredients I get the full flavor of the beef. You can agree or disagree but try it first then make up your mind.
The chili is done and yes I tasted it and I really like it with the larger pieces of tomatoes and the rings of banana peppers.If you like it hot use Jalapeno peppers that's up to you. 
It is slightly more spicy than what I usually make but it turned out really good!
Shhh don't tell my NM friends but I am going to do a NY thing when its time for dinner. I am going to add a scoop of sour cream.
Nope you can not take the NY out of a NY girl but you can get her to add NM style food to her menu.
