Yellow Rice W/Sausage & Cheese
First I have to apologize for not posting very often. So much going on here and it's time to build up the stock I am selling on Ebay for Christmas.
The other big thing is my car broke down and all the money I can get together is going for the repairs this month with means I will be spending maybe ten dollars on food all month.
Don't worry. I am a food hoarder. I have lots of canned and frozen food available the trick will be to make it stretch as far as I can.
I decided to start today.
Here is what I made:
Yellow Rice W/Sausage & Cheese
Ingredients:
2 Smoked sausages ( I used Guy Fieri's Cooked Smoked Sausage with Mozzarella and Parmesan cheese. I believe there is fennel in this sausage as well)
1 cup of rice ( I use Virgo's yellow rice with saffron. You can get it at the Dollar Tree)(If you use plain white rice why not kick it up a notch with broth instead of water)
1/2 cup of peas
Directions:
Most smoked sausage is already cooked all I do is warm it up and take the skin off so I can crush it up into the rice.
If you don't have the rice in the freezer then follow directions and add to the crushed sausage when it is done.
Next add peas and stir everything together.
Put in microwave and cook for two minutes.
It's done.
I was not sure if fennel and saffron would go well together but I have to tell you it did blend beautifully and it tasted so good!
