Crock Pot Creamy Chicken Stew
I know I have been remiss in writing this blog lately.
I know those that know me understand. I moved cross country and there is so much for me to do. I never knew how much was involved in moving your life to another state.
Any way this month and next is going to be a challenge.
Social Security Disability is taking half my check each month until I can get things transferred.
I have to put my rent, bills, and pets before me and buying food.
I allowed fifty dollars for the next two months and the holidays.
That means stretching what I make as far as I can.
Today I decided I wanted stew. Beef of any kind except for ground beef was out of the question so I made a chicken stew with groceries I bought today and what I had in the pantry.
It turned out great and I decided to share the recipe with you:
Crock Pot Creamy Chicken Stew
Ingredients:
1 boneless skinless chicken breast (Walmart has a large bag of them for 6.00 dollars)
1 Skewer of mushroom, squash, onions & peppers ( this is also
something very affordable at Walmart)
4 small potatoes or two medium size
1 can cream of chicken soup
1 teaspoon of chicken bouillon cube
1/2 can of water
Directions:
Line your crock pot and place all the ingredients in the crock pot on high for four hours. Be sure to chop up the chicken and if your are not using small potatoes please cut the potatoes in half or quarters depending on the size of the potatoes.
I know this does not sound like a lot for dinner.
Believe it or not it was.
I had a very filling dinner and also made five dinners for the cats.
That means if I did not feed the pets the gravy and chicken I would have had enough for an open face sandwich for another meal out of the gravy and chicken.
I decided to make these meals for the cats because first they love my gravy and second its a lot cheaper than cat food.
Believe it or not cat food is more expensive than people food!
This was a great saving for me. You know what would work for you.
I have to say that not all Walmart's are created equal.
I would never have gotten these foods at the Glenville Walmart but the one here in Artesia has great food.
Two things though that I find is good at all Walmarts is their frozen foods. The frozen chicken breasts are a fantastic value at a huge package for six dollars and don't pass up the skewers of vegetables. Always while shopping think outside the box. Don't pass things up because they are suppose to be for a specific purpose. For example the skewers of vegetables are huge and fresh and I used one skewer for the stew and got to freeze two bags full of vegetables for another day and this huge package of vegetables only cost me two dollars. This is less than trying to buy the same amount of fresh vegetables or even a frozen version.
I hope this helps a little with some of the grocery shopping you need to do.
Just always take the time to look all the fruits and vegetable over and you will always come out the winner!
