Mexican Cheese & Vegetable Soup


I started out to make cheddar cheese soup. I realized that it did not have everything in it that I wanted nor did I want to spend any additional money for another bag of shredded cheddar cheese. 
So I started grinding up the veggies and then added more veggies and from there this soup was born.
Here is the recipe for what I made:

                       Mexican Cheese & Vegetable Soup


Ingredients:

1/2 cup of onions grated 
1/2 cup of celery grated
1/2 cup of potatoes grated
1/2 cup of flour
1/4 cup of butter
12 oz of shredded cheese. 8 oz Mexican shredded cheese, 4 oz sharp cheddar cheese
2 cups of milk
1 cup of chicken stock
1/4 cup of white wine...I use Chardonnay 
1/4 teas of red pepper

Directions:

Add butter to med size pan and melt then add the veggies
cook for about 5 to 7 minutes until the vegetables are tender
add the garlic and blend in and cook for two minutes
Add the flour and coat the vegetables
After that add the milk, chicken stock,and wine.
cook this until it desired thickness then add cheese and stir in and allow to cook until well blended.
Then the soup is done.
Serve with some croutons or jalapeno peppers you have cut into thin rings and enjoy.
