Roast Pork with Apples & Onions
The other day I went shopping at Walmart and found a pork loin on sale.
It has been a while since I have been able to afford pork and for a porkaholic like myself I feared going into withdraw any day!
I checked my cook books and on line for an inspiration and finally decided what I would make.
Here is the recipe:
Roast Pork with Apples & Onions
1 small boneless whole pork loin roast
1/4 teaspoon Sea salt & freshly ground pepper to taste
1 tablespoon olive oil
1 large apple cut into wedges
1 large onion, cut into wedges
1 rib of celery heart
2 1/2 garlic cloves, or teas. of prepared garlic
1 teaspoon dried rosemary, crushed
1 bay leaf
2 tablespoons of butter
1/2 cup beef stock
Directions:
1. Sprinkle roast with salt and pepper
In a large nonstick skillet, brown roast in oil on all sides. You are not cooking the meat you are brasing it.
2. Place in a shallow roasting pan with beef broth on the bottom of the pan coated butter or I like using liquid butter that I keep around for popcorn. This helps hold the rosemary, bay leaf, and garlic on the roast.
Arrange the apples, onions and garlic around roast; sprinkle with rosemary.
At least once turn the onions and apples so that they are evenly coated.
Bake, uncovered, at 350° for 45-60 minutes or until a thermometer reads 145°,
Remove the pork, apple and onion slices from pan and let pork stand for 10 minutes before slicing.
While the pork is resting raise the heat to medium high and boil the broth to reduce it to a thick and rich sauce.
Spoon the sauce over the roast then cut into slices then serve with the apples and onions. It makes a great presentation to serve all this on rice.
This would be great served with a side of saffron rice.
