Spanish Rice With Ground Beef



I like the Trisha Yearwood show on the food network. Often her recipes are too complicated and expensive for me to make but on occasion I find something I can make and more importantly afford to make.
Yesterday I found such a recipe for Spanish Rice.
It sounded good so this morning I made her recipe with my twist and it turnout great!
Here is what I did:


                         Spanish Rice With Ground Beef


Ingredients:

1 can chopped tomatoes (14 1/2 oz)
1 cup of long cooking rice
1/4 pound ground beef
8 drops of hot sauce
1/2 cup of chunky salsa (optional)
1/2 peppers & onions

Directions:

1. Add two tablespoons of olive oil to a pan
2. Then add vegetables and rice stir and allow rice to    brown
3 slightly brown the rice then 
4. Add can of tomatoes salt hot sauce and pepper
5. bring to boil then cover and simmer for 20 minutes
6. When rice is cooked add a half cup of salsa and ground beef.
7. Serve and enjoy!



I always use long cooking rice I like saffron so I have two pounds of that rice in my pantry and I like the flavor.
You choose the rice you like best.
When you "brown" the rice I am not saying the rice will be brown in will take on a little color. The main reason for doing this is to release the flavors.
Also I use frozen onions and peppers. It saves a lot of time  Keep an eye on the pan and stir often. It only takes about five minutes until its time to add the remaining ingredients.
When the rice is done cooking the rice will be fluffy but to my taste a little dryer than I like Spanish Rice. You decide for yourself. That was when I added the 1/2 cup of salsa and blended in the ground beef that I had already cooked..
If you do add the salsa please add it after the rice is cooked. 
The reason I say this is first you don't want to rice to be watery and second if you add it after cooking you keep the fresh tomato taste in the salsa if you don't its just more cooked tomatoes.

I have done this several times for my family over the years and they loved it The new part was browning the rice and making the rice with tomatoes instead of water. The difference in taste is amazing! If my mom was still here she would have loved this Spanish Rice!  .What ever way you choose to serve it I believe you will enjoy it because it is so good!
