The other day I found some of my neighbors we're going to be home ChristmI had a turkey breast in the freezert in the Ifreezer along with some dressing and some nice big rolls.the only thing I didn't have with cranberry sauce.I dhad donated that along with a lot of other items to make a basket for a poor family. On the bright side I hit some dried cranberries in the freezer and decided to make cranberry compote It was so simple and yes I just tasted it it is so good. Here is what I did:
Cranberry Orange Compote
Ingredients:
1 1/2 cups dried cranberries (this works with fresh and frozen as well)
3/4 cup water cranberry juice, or orange marmalade
1/3 cup sugar white or brown
dried orange peel, real, orange
1/4 tsp salt
Directions:
1 Peel, orange and add to the marmalade, or orange juice instead of water
2.Add all ingredients and boil lightly until the cranberries plump up.
simmer till it is thick and of the right consistency.
3. If after cooking the cranberries the consistency is wrong add some cornstarch to some water and add it gradually to the cranberry orange you just cooked until the consistency is what you want.
Please understand this is a very forgiving recipe.
You can add dates instead of oranges if you want for example.
I had both on hand but since one of the people who are going to eat the cranberries has a glutton free diet I chose the oranges.
Add nuts to the mix as well I may add some to mine later after I have given some of this to my neighbors.
I used the marmalade it made this whole thing so easy!
I had 4 small Clementines left offer that were going soft so I added the juice and the pulp instead of an orange.
Use what you have on hand.
What I am going to make for everyone is the Thanksgiving sandwich.
That is a:
roll
turkey
cranberry sauce
dressing.
You can add butter to the roll if you want or even heat a little gravy if you want and use it like a condiment.
That's Christmas Eve dinner for myself and some neighbors.
