Deconstructed Crock Pot Omelet


Yesterday a Facebook posted this recipe and it sounded good but not exactly what the people in my life would enjoy. I live in the Southwest and people here like food with a little bite to it plus this is way too large for the person who lives alone or with one other person.

I will post the original and what I made. To separate the recipes I will call mine an upside down version.

Here is their version:


Ingredients:


1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese

Directions:

1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt....
...and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Deconstructed Crock Pot Omelet

This is my version that will serve three or four people or enough to freeze and enjoy for another meal or two:



Ingredients:

Hash browns:

2 large potatoes or 4 small 
1/4 cup of celery
1/4 cup of onions
1 tablespoon of paprika (use 1 teaspoon if you don't want the bite)
1 tablespoon of garlic
Sea salt and fresh ground pepper to taste.
 1/2 pound of bulk pork sausage

Directions:

I used a small one cup food processor. That's all I own so it works fine
I ground the celery, onions and potatoes with the skin on. I also added all the spices and the garlic.
 We all know the flavor is in the skin.
I placed all the ingredients in a hot skillet and cooked until the potatoes were brown.

Remainder of ingredients:

I removed the potatoes from the skillet and in the same skillet added a 1/2 pound of pork to brown when the pork was browned I added this to the potatoes
Then I added a 1/2 of a small package of grated Mexican cheese to the mixture and blended all together and put in a lined crock pot.

Next I made the eggs to use in the crock pot.

Once again I did it my way here is what I did:

Ingredients:

4 eggs
1 heaping tablespoon of sour cream
Sea salt and fresh ground pepper to taste.

Directions:

Using a whisk combine all the ingredients
Place eggs over the top of the other ingredients in the crock pot.
Cook in crock pot for 6 to eight hours.
Then enjoy!


The reasons for the differences are simple. It is based on culture and size of the people will be enjoying the food. 
The reason I made the hash browns is because I did not have any frozen hash browns and have never bought any. It was just as easy to make my own as I have always enjoyed then back east while kicking up the flavor a little with the paprika. 
If you are saying too much spice then use less or add the spice you might enjoy in your hash browns. This is another good reason to make them this way.
I always use sour cream instead of milk or water for a simple reason it adds more to the eggs to make them taste so good.
That's it and whichever recipe that appeals to you give it a try I am sure this will be totally enjoyed.

Update: I just took the omelet out of the crock pot. It is one of the best things I have ever made!
The little bit of heat from the paprika is not over whelming or hot. Its perfect!
