Southern Style Pulled Chicken
Since my kitten passed I have a lot of ready cooked chicken to use up (I buy Tyson) so I had to come up with some innovate ideas.
My kitten toward the end needed a lot of food and I could get her to eat a lot of chicken so my freezer is full.
Here is what I came up with today for dinner:
Southern Style Pulled Chicken
Ingredients:
1 cup of pulled chicken ( I am using precooked but this would be good as well with a rotisserie chicken even fresh chicken breast you cook maybe even pork or beef its up to you)
1 cup chicken broth (don't sweat it if you don't have broth use
the broth you have on hand)
2 Tablespoons dry bbq ( I use Memphis but use the one you have and like. If you don't have any visit the Dollar Tree they have it and its worth keeping on hand)
1 Teaspoon Seasoned Salt
Directions:
Combine all the ingredients in the slow cooker and allow to cook together for four hours then add the chicken and cook for another half hour.
This sauce in the crock pot is to flavor the chicken so expect it to be a stronger flavor so it can influence the chicken in the crock pot when its done take the chicken out and discard the remaining sauce. (this also will be very little or save it for a basting sauce) Then cover the chicken with you favorite bottled bbq sauce. Mine is Country Sweet.
I like to serve with a vegetable and cornbread.
Its up to you what vegetable but I think since this is southern and I live in the South West I make cornbread with a twist,
I like Jiffy cornbread mix its so easy and tastes really good!
My twist is I add jalapeno peppers and banana peppers.
Maybe five each of the ready to use slices. Yes also available at the Dollar Tree.
