Baked Porcupine Meatballs
Maybe it's just me but I see traditional Sunday dinners becoming something that just does not seem to be important anymore especially when we live alone.
The average though is why bother it's just me?
It is important because you are and you deserve to have a Sunday dinner.
I agree you don't have to go over the top but why not make something that is special like these Porcupine Meatballs?
These taste good and you will have some to enjoy later in the week as a meatball sub.
That makes it very cost effective and something I know you will enjoy.
Here is the recipe:
Baked Porcupine Meatballs
Ingredients:
1/4 cup uncooked long grain rice
1/4 cup water/or beef broth
1/2 tablespoon onion soup mix
1/3 cup chopped onion
1/2 teaspoon salt
dash of celery salt
1/4 teaspoon fresh ground pepper
pinch of garlic powder
1/2 pound ground beef
Heat over to 350 degrees
Directions:
1. Mix all the ingredients
2. Shape into 1 1/2 balls
3. Place in ungreased oven safe pan
4. pour some spaghetti sauce over the porcupine balls
5. Cover and bake porcupine meatballs for 15 to 20 minutes
This can be served with pasta, a vegetable, or a side salad.
I make my own sauce. A quick one but I like to make sauce but your favorite commercial sauce will do just fine as well.
Its an easy go to dinner for Sunday dinner.
