Eggplant Lasagna


Last month my cousin David sent me a manuscript to read and in the manuscript was a recipe for eggplant lasagna.
Since then I have been obsessed and I wanted to make it but I had to wait until eggplant was affordable.
This week it was and today I was in the mood to cook so I made my version of this recipe. (I always simplify)
I made some meat sauce first but I have not tried it yet so I will post that another day if it tastes good.
After I made that I decided to make the eggplant lasagna.
I made everything homemade but you can decide where to take shortcuts.

Here is what I made:


Ingredients:


1 small eggplant
1 small jar of spaghetti sauce (I made homemade your    choice)
1 small container of ricotta 
1 package of shredded Italian cheese
1 egg
2 table spoons cream cheese
1 table spoon grated Parmesan cheese
1/2 pound of hamburger 
1 tablespoon Italian seasonings

Directions:

1. cut  eggplant in 1/4" slices length  wise 
2. rub olive oil on both sides of the slices and sprinkle some I Italian seasons on the front and back of the eggplant
3. place in the oven at 400 degrees for about  twenty minutes.
Check on the slices if they are starting to brown and are fork tender they are ready to come out.
4. while the eggplant is cooking mix up your ricotta .
5. I use the ricotta, 1 egg, a handful of the shredded Italian cheese and a little of the Parmesan, then I add about a teaspoon of the Italian spices.
6. If you use jar sauce you are ready to assemble. 
7.  spray the bottom of your pan I used a cake pan but use what you have.
8.  first layer is the eggplant, then a layer of the sauce then the ricotta. do it again 
and one more topping of sauce then on the top of the sauce sprinkle the Italian shredded cheese and sprinkle the Parmesan cheese.
9. Place in oven for twenty minutes or until the cheese starts to brown.

In the picture you will see a slice missing. I had to make sure it was good right?
This was so good I could have eaten it for desert!
Also when you cook the eggplant the way I did the eggplant gets crispy I at the left over eggplant as is! It was that good!
Enjoy I know this is one recipe that will go over big!
You will have enough for two or four meals depending on how much you eat. Though one slice with a salad will be very filling.
I will share mine with a neighbor because I have no room in my freezer.
