Turkey  Waldorf Salad (you can use chicken)



For the last month I have been craving turkey and Waldorf Salad. 
So when I went shopping I bought a turkey breast for this past Sunday plus an apple. I had everything else I would need. 
Sunday I made the turkey and shared turkey and gravy with two of my neighbors and of course enjoying it myself.
I had about a cup and a half left of turkey left over. That is about three slices of turkey. This was the perfect time to make a turkey salad but remember I wanted a Waldorf Salad as well.
I took my time and figured out a recipe and it turned out great so I would like to share it with you.
Here it is:




Turkey  Waldorf Salad
INGREDIENTS:

1 1/2 cups chopped cooked Turkey 
1 red apple, diced ( I like Gala for this)
2 celery ribs, sliced
1⁄2 cup chopped walnuts

Dressing

1 cup real whipping cream ( use cool whip if that is all you have)
1⁄4 cup mayonnaise
1 teaspoon Dijon mustard ( I use yellow mustard and if you don't llike mustard use lemon juice)
1⁄4  teaspoon  fresh ground sea salt
1⁄2 teaspoon fresh ground  pepper

DIRECTIONS:

Mix together chicken, apples, celery and walnuts in a bowl.
Whisk together, dressing ingredients.
Season to taste.
Pour over chicken mixture in bowl; toss well.
Refrigerate at least 2 hours.
Arrange lettuce on serving plates; top with chicken Waldorf salad.


This was so good and so fast to make! Maybe 5 minutes start to finish and another couple minutes for clean up. Then you will be done and have a Wonderful Turkey Waldorf Salad for dinner!
