  • Tomorrow is Easter and I have been invited out I decided to make a meal for at home. Then I heard my neighbor was going to be alone and told her I was  making her a Au Gratin Casserole. It really seemed to cheer her up so I made two dinners from this recipe. 
  • The recipe below is enough for five people and would cost $4.00 to make.
  • If dinner is just for you or two of you just cut the ingredients in half. 
  • Here is what I made:



  • Au gratin Potato Casserole

  • INGREDIENTS:

  • 2 shredded Cheddar cheese 
  • 1/2 cup shredded cheese
  • 1/2  pound chopped up ham (I use honey ham)
  • 2 tablespoons all-purpose flour (I use corn starch)
  • 1 cup milk
  • 1 teaspoon Italian seasoning
  • 2 heaping tablespoons of onion flakes
  • 3/4 teaspoon  seasoned salt
  • 1/4 teaspoon pepper
  • 5 medium-sized Idaho Russet potatoes, cut into 1/4-inch slices
  • 3 tablespoons butter
  • 2 tablespoons grated Parmesan cheese
  • Paprika for sprinkling


  • Instructions:

  • Preheat oven to 375 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.

  • In a medium pan, combine 2 cups cheese , ham, flour/or cornstarch, milk, Italian seasoning, onion flakes, seasoned salt, and pepper.
  • cook over stove until thickened 
  •   Arrange half the potato slices in the baking dish. Pour half the cheese mixture over potatoes
  • . Arrange remaining potatoes in baking dish, and pour remaining cheese mixture over potatoes. Dot with butter, cover, and bake 60 minutes.

  • Remove potatoes from oven
  • . Uncover potatoes and sprinkle evenly with cheese and the Parmesan cheese. 
  • Sprinkle with paprika and return to oven to bake 8 to 10 additional minutes, or until cheese is melted. Serve immediately.

  • I am going to serve this with strawberry apple sauce and for desert I made strawberry cupcakes with cream cheese frosting.
