Stuffed Squash




The other day I was looking for inspiration to make a squash dish.
I found one I liked but they made it more complicated than I would like and I am sure you would like and too time consuming.
I decided to take the inspiration my own recipe that was simple but accomplished what I wanted.
Here is what I did:
Stuffed Squash



Ingredients:

1. Zucchini  
1/2  small mild flavored squash your choice ( I chose      yellow Mexican)
1/4 medium onion
1 stalk of celery
1 sausage ( I chose Polish Kielbasa I had it on hand)
1/4 cup of prepared spaghetti sauce
fresh ground pepper& seasoned salt to taste

Directions:

1. Core the zucchini by taking out the seeds with a table spoon that will leave a little less than a 1/2" of zucchini inside the squash making a boat to hold the other ingredients.

2. Chop up the other ingredients and mix in the spaghetti sauce.

3.  Spoon the mix into the zucchini boats

4. Wrap in foil and put in the oven for 30 minutes at 375 degrees.

There are variations you can do with this recipe.
First you can make it vegetarian but excluding the sausage and added another vegetable to the mix instead.
You also can add more sauce. I wanted the flavor of the vegetables but if you enjoy the taste of the sauce add more.
I added pineapple on the side and it went very well together.
As you can see this is a versatile  recipe I will use again and again.
