Corn Fritters
This is one of my favorite recipes that also has good memories.
Years ago when my mom was still alive we use to go to a little town in Northville, NY to a little cafe called El Hombre's.
They only breakfast and lunch we would go after church on Sunday and call them before we left to make sure they were making corn fritters.
They had the best corn fritters we ever had.
This the recipe for the corn fritters:
Ingredients:
1 16 oz can corn drained
1 cup flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 1/4 cup sour cream
1/4 cup of melted shorting
Directions:
1. melt 1/2 of the shorting to 400 degrees
2, Stir in the first 6 ingredients plus 1 tsp of shorting
and separated into patties with spatula
3. Fry 3 or 4 minutes until browned turning once
4. Place fritters on paper towel and drain
5. Sprinkle with powered sugar or serve with maple syrup
6. Makes about 6
All that is left to do is pour the coffee and enjoy!
