"Sweet Pea" Burgers


                              "Sweet Pea" Burgers

                                              

The other day I was watching Trisha Yearwood on the food network.
I though these burgers sounded interesting.
I was going to make them for dinner but a friend stopped by and said don't make dinner I am making a pork roast. 
I can not pass up pork so I changed my mind and made these burgers for lunch.
I really loved the flavor and taste and think you will too. 
Here is how it is made:

"Sweet Pea" Burgers

Ingredients:

Honey Mustard Sauce:

1/2 cup mayonnaise
1/2 cup whole-grain Dijon mustard
1/4 cup honey

"Sweet-Pea" Burgers:

1  large sweet potatoes cooked
1/2  15-ounce can garbanzo beans, drained and rinsed
1 egg, beaten
1/2 teaspoon chili powder
1/4 cup all-purpose flour
1 cup breadcrumbs
1/4 cup finely grated Parmesan
Salt and pepper

2 tablespoons olive oil
2 tablespoons butter

To Serve:
2 onion rolls, toasted
Red lettuce & Honey Mustard condiment

Directions:

For the honey mustard sauce:

 In a bowl, combine the mayo, mustard and honey; mix well.

For the "sweet pea" burgers"

1. Scoop the flesh of the sweet potato into a medium bowl and mash with the garbanzo beans.
2. Add the egg, chili powder, flour, breadcrumbs, Parmesan and some salt and pepper.
3. Mix until fully combined. Form the mixture in 6 patties.
4. In a large skillet over medium heat, heat the oil and butter, swirling them together. 
5. Add the patties to the skillet and cook until brown and crispy, about 5 minutes per side. If you let them get a charred finish they will taste more like burgers
6. Transfer to a paper-towel-lined plate to drain.
7.Serve the burgers on toasted onion rolls spread with honey mustard sauce and top with lettuce .

For the sauce I took a short cut and mixed the mayo with honey mustard it turned out great.
You will get about six patties .
I made mine for lunch and think this a great lunch so freeze what you have left and enjoy when you want.
