Authentic Mexican Pozole in a Crock Pot
A few months ago Jutie my next door neighbor invited me over for a very enjoyable lunch. She made a wonderful meal that featured Pozole.
I wanted to be able to make this meal for myself. She made a tomato based version of this dish and I decided to make the Mexican version. I didn't think I could make it any better than she had made it.
So this is what I made today:
Authentic Mexican Pozole in a Crock Pot
Ingredients:
1 Pork Chop cut up
2 oz green chilies (thats half a small can)
1/2 med onion chopped
1 teas garlic minced
1/2 teas cumin
1/4 teas oregano
1/4 tsp ground cayenne
1/8 tsp each salt and ground pepper
2 cups chicken broth
1 cans (29 oz) cooked hominy corn
1/8 tsp each salt and ground pepper
2 cups chicken broth
1 cans (29 oz) cooked hominy corn
1/2 teas chili powder
*** you can add slices of jalapenos chopped or ancho chlies
Directions:
1. brown a pork chop
2. Add all the ingredients to the crock pot
3. When the pork is ready add it to the crock pot after you chop it up
4. Set on high for 5 hours.
***If you want this more as a soup add 1 cup of water
This makes about three bowls of soup of stew.
Garnishes that are always served with are:.
lime/lemon wedges.
sliced radishes.
chopped cilantro.
Shredded cabbage(not red).
