Cranberry Sauce Summer Style


I have been in the mood for a dinner like the one I would serve on the holidays.
Not as fancy or elaborate but with the feeling.
I was going to buy a turkey breast but decided against it. I knew I could get the feeling from chicken.
I had bought a large bag of what is called 1/4 leg chicken. It was a ten pound bag and it was basically the whole leg and thigh.
So I decided to use to legs for my dinner . 
I also along with this craving also wanted to start cleaning out my cupboard and freezer and making this meal would help in that effort. 
I found a partial box of stove top stuffing, and a package of chicken gravy. 
I knew I had potatoes and in the freezer a cup of dried cranberries from Christmas. Time to use them up.
Now I had what I needed for dinner.
This is what I did in case you get the same craving. My excuse for this craving is simple and everyone is talking about Christmas in July, it is a good excuse so I will use it.

Here is what I did:


Dressing:

This was simple
All I did was make the stove top according to directions then mixed in some of the gravy.

Next:
The chicken was simple  as well. After I made the package of gravy I first injected some Italian dressing under the skin and then rubbed gravy on the top of the legs then just put them into the refrigerator is the pan I was going to cook the stuffing in and placed the legs over the stuffing to marinate. 


Finally:

The Cranberry Sauce

This was as simple as the rest.

Here is what was in it.

INGREDIENTS:


 1 cup  dried cranberries 
1 teaspoon lemon juice
 ¾ cup ( water 
¾ cup cranberry juice cocktail


 INSTRUCTIONS:


 Add the cranberries, lemon juice, water and cranberry cocktail to  pan
Bring to boil then cook on simmer until liquid is reduced and has thickened.
Put is food processor and process 
Your done!
Later I think I will add some crushed pecans. 
It is up to you weather you like the cranberry sauce that way or not.

I am out of vegetables and instead will pick some tomatoes from my tomato bush outside and add some cottage cheese and onions for a side dish.
