Crock Pot Squash Soup

Squash Soup




This is not a creamy soup is is a nice light broth. Yes I am saying this is soup and it is perfect for summer!
You can change what you put in it but the vegetable that is necessary is squash.

Here is how I made it:

Ingredients:

2-4 squash
2 chicken leg quarters
1/2 cup of green, red, orange, peppers chopped
 1/2 cup of chopped onions
4 small potatoes or 2 med chopped
2 corn on the cob
1/2 box of chicken broth
1/4 cup of Italian dressing
Sea salt and fresh ground pepper to taste

Directions:

Rub the chicken legs with Italian dressing
Then add the vegetables to the bowl with the legs and pour the remainder of
the dressing over the vegetables then mix and let marinate for a couple of hours
After letting the chicken and vegetable marinate put off the ingredients and the broth in a crock pot.
Put the crock pot on high and cook for 6 to 8 hours or until everything is tender.
Remove the chicken and chop up. Returning only about a 1/4 cup of the chopped chicken to the soup. Set the rest aside.
Serve with crusty bread and enjoy!

This week I had bought 4 squash. 1 yellow, and one zucchini then two different Mexican squash.
To be honest it does not matter which of this type of squash you use so use what you like best.
Another thing I do is but what the Dollar Tree calls pepper and onion stir fry. What is in the bag is onions, and three colors of squash that is already chopped.
I use about 1/4 of the beg.
Chicken leg quarters on really reasonable this time of year.
You can use any type of chicken you want. Even Rotisserie chicken you might have left over.
If you don't eat meat or chicken then don't use a vegetarian broth you can get at the Dollar Tree.
It is the squash that makes this dish and the "secret"ingredients which is of course the Italian dressing. Please don't skip this step you can not believe how good this is when it is added to the squash soup.
If you make the soup as I did here is how much I got. 
I had enough to give two neighbors a nice size bowl or soup. I then had enough for three more meals. I then got to the chicken. There was enough chicken for two lunches and two meals for my little niece dog Little Bit.
This is a summer go to meal I have been making for a couple years now.
It is light and it is incredibly good!
