Creole Shrimp & Rice With Tomatoes & Vegetables
The meal I fixed today would have been a Sunday dinner but I am going out to dinner tomorrow and fixed it for tonight.
I made this my way. I like big chunky vegetables and added a couple of spices and wine that is not common in this dish but worked very well.
Here is what I made:
Ingredients:
1/4 to 1/2 pound of raw devained and cleaned shrimp
1 celery rib, chopped
1 small onion, chopped
1 small green pepper, chopped
1 tablespoon olive oil
1 garlic clove, minced
1/8 teaspoon chili power
1/8 teaspoon onion powder
1/4 teaspoon cayenne
12 drops of hot sauce
1 cup rice
1/4 red wine
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup tomato sauce
1/8 teaspoon cayenne pepper
1 teaspoon of Italian seasonings
1 teaspoon of sugar
Directions:
1. First coat pan with olive oil and add the vegetables and cook for a few minutes along with the spices cook until crispy tender
2. Add the shrimp and the wine and steam until the shrimp is pink
3. Removed the vegetables and shrimp and set aside
4 add the can of tomatoes and sauce to the pan with the drippings from the vegetables
stir in a teaspoon of sugar and the hot sauce then add the cup of rice and bring to a boil
then put the cover on the pan and simmer for twenty minutes.
5. When rice is cooked put the vegetables and shrimp back in the pan with the rice cover and allow to warm then its ready to serve.
I checked today when I went to the store the shrimp would cost a couple of dollars. Quite reasonable.
