I'm coming down with the cold or the flu and I want some soup.
I didn't want chicken noodle like everybody else I wanted homemade cream of tomato soup.
Everyone seems to think that tomato soup is so hard to make but it's simple and it's inexpensive here is my recipe.
Ingredients:
1 tablespoon extra-virgin olive oil
1/2 cloves garlic, minced
1 teaspoon dried herbs, such as thyme, oregano, rosemary or basil
Pinch of crushed red pepper (optional)
1 28-ounce cans crushed tomatoes
1/2 cup water
1 teaspoons sugar
1 cup nonfat or low-fat milk
Directions:
1. Heat oil in a med saucepan over medium heat.
2. Add garlic, herbs and crushed red pepper
3. Stir for about 30 seconds.
4. Add tomatoes, water and sugar. 5. Bring to a boil; reduce heat and simmer for 10 minutes.
5. Stir in milk and heat through, about 1 minute
Thats it thats all there is to it .
