ORIENTAL PORK STEW


 

Yesterday was St Patrick's Day and I made the traditional boiled dinner for everyone.
Today I wanted something different and decided on Pork Stew.
This is how I made it:

Ingredients:

1/2 lb pork ( I use two pork chops use what you can afford)
1/2 cup of peppers and onions ( I buy a pound bag 
1/4 c. vinegar ( I Use maple you use what you prefer)
1/2 c. barbecue sauce
2 Tablespoon brown sugar
Salt and pepper to taste
1 tbsp. cornstarch
1 small can  pineapple tidbits or chunks in juice

Directions:

1 Cut pork into 1 inch pieces and brown.
2 Then add other ingredients;
3  cover and simmer for 30-35 minutes.
***Or do it my way and put everything in the microwave add the pork and cook on high about 3 hours.
Ok I am lazy lol it's easier!
Simmer an additional 10 minutes and serve over rice, if desired.
I use Vigo yellow rice with safron
