Vegetable Explosion Stoup




The other day I was at work and the church that rents us the space behind the church started cooking dinner for that nights dinner.
It smelled so good! I asked my boss what they were cooking? She said vegetarian vegetable soup.
I figured out what spices they were cooking and when I  came home from work I and got the same thing ready for dinner the next night.
(Sloup is a cross between a soup and a stew.)

Here is what I did:

Ingredients:

1 bag chunky mixed vegetables
Add what ever veggies you have left over in the fridge
1/2 box of vegetable or chicken stock
1 small can of chopped tomatoes or  a couple of fresh
2 Potatoes chopped it four pieces each
1 tsp of sea salt
1 tsp of fresh ground pepper
1 tabl of old bay 
1/2 cup of filtered water

Instructions:

Put all the ingredients in the crock pot,
Yes you can cook this on top of the stove as well.
if you put it in the crook pot it will need 5 hours on high
or 6 to 7 on low.
What I did was cooked it over night and it was ready for dinner when I got home.
I did not say what vegetables because it is up to you what you like.
I did add one chicken thigh for the cat and dog.
If you want to add chicken do it.
My recipes are for you and I want you to do it your way.

There was enough soup out of this to share with three friends.
The chicken of course was for the pets and they enjoyed it.
