Sausage, Kale, and Chick Pea Soup
This is one of my favorite soups that I found on the food network a long time ago.
I can never afford all the ingredients they use so through trial and error I come up with a less expensive version that I think is just as tasty.
Here is the recipe:
Sausage, Kale, and Chick Pea Soup

Ingredients:

1 tablespoon extra-virgin olive oil
1/2  pound hot sausage, bulk or casing removed
1/2  onion, chopped
1 rib celery, chopped
1 large carrot, peeled and chopped
1 large Idaho (russet) potato, peeled and chopped into small dice
1 hot pepper thinly sliced or finely chopped or 1/2 teasp. of dried red pepper.
1 teap orangano or mixed Italian Seasoning
1 large cloves garlic, chopped or sliced or one teasp of ready chopped garlic
1/4 tablespoon ground cumin
Sea salt and freshly ground black pepper
3 or 4 leaves of  kale  stemmed and very thinly sliced ( I have fresh kale in my gatden and its time to use it)
1/2 can  tomato paste or one small can of sauce
1/2 cup white wine
Freshly grated nutmeg or dried nutmeg ( I only use a quarter teaspoon you could use more if you like I'm just not really fond of nutmeg)
1 can chickpeas or any beans you have on hand such as white navy lima beans
2 cups beef  stock
1 cups water

Directions:

Lightly brown the sausage you use and crumble it up into the crock pot with the rest of the ingredients.

Cook on low for about 4 hours and check and see if everything is .ready if not let it cook another hour.

Even with this inexpensive version of the soup I still take a couple of less expensive steps either way it does work out and is very delicious.
For example A friend gave me four cans of potatoes. I tried them and they're actually very good so I will cut these up and put them in the soup.

Also I have a package of natural beef bouillon and I will use this instead of buying extra boxes of beef stock.
That's just an example of some of the substitutions you can use bottom line you going to make this your way.

No matter how you choose to make it I think you will agree this is a delicious soup!
