Stuffed White Pizza

I have not been doing a lot of exciting cooking lately.
I have been working so many hours on helping people with citizenship that I haven't had much time to do anything else.
Today it was time to start getting my garden  ready for winter  and amending the soil for the bulbs I wanted to plant for next year.  I picked most of my tomatoes peppers, etcetera out of my garden and decided to make a stuffed white  pizza with some of them tonight.
I already had the cheese on hand and I had bought something new at  the Dollar Tree. They are starting to carry what is called ultra thin pizza crust.
So I didn't even have to think about making the crust for the stuffed white pizza tonight. It only took me about 5 minutes to chop up the vegetables  and mix  up the cheese and before I knew  it I was ready to put the stuffed white pizza into my convection oven.
Here is the recipe I developed based on one that we used to enjoy at the Crystal Bar in Amsterdam New York.

Ingredients:

One or two pizza crust
Half a cup of shredded Italian cheese
Quarter cup cream cheese
Quarter cup ricotta
Garlic salt to taste
Italian seasoning to taste
Fennel ( if you don't like fennel don't use it) to taste
( I suggest you use just a little sprinkle of each of the seasonings)
One tomato sliced
Stalk of celery chopped
Quarter of a green pepper chopped
Quarter of an onion chopped.

Actually use whatever veggies you like or don't use any at all.

Directions:

There is no pre cooking involved and if you use the premade crust it makes it even easier. If you prefer you can buy the uncooked crust in the dairy department or freezer case of your local grocery store, it's up to you what you use.
Get your vegetables ready as described above.  Of course if  you don't want to use vegetables don't use them. This is your stuffed white pizza so make it the way you like it.
When I order a pizza it's always a vegetarian pizza so that's why I used some of my fresh veggies tonight.

1. First Sprinkled the pizza crust with the  shredded cheese .
2. Next lay you're prepared vegetables on top of the cheese.
3. Then combine the remainder of the cheese together with the seasoning and spread it on top of the vegetables.

(Since I'm only one person what I did was cut 1 pizza crust in half and that was more than enough for me, and  probably for someone else as well, but I was really hungry after working in the garden all day so I ate the whole thing myself!)

4. When I had everything inside I was going to use in the stuffed white pizza I put the second half of the pizza crust on top of the ingredients and just kind of  pressed it down together and it stayed very nicely.
5. I then sprinkled a little water on top and then sprinkled on a little Italian seasoning. You can do the same thing with olive oil if you would like , the idea is it hold the seasoning in place on top of the pizza. Also you could sprinkle a little bit of cheese as I did.
6. I put  the pizza  in my small convection oven for15 minutes at 400°.
7. When I took the pizza out I let it sit for about 5 minutes so it could cool down a little before eating it.
7. Serve with a little bit of Jared pizza sauce  on the side and it was ready to eat

As one of my neighbor's use to say it's one of the best things I ever made. I think I have to agree. The bonus is it is one of the fastest and  easiest thing to make  as well.
