Tomato Bacon Pie
I found this recipe in our local Sunday paper a couple of weeks ago and made it for dinner yesterday,
It is really good and not expensive to make.
Here is the recipe:
Ingredients:
1 unbaked deep dish pastry shell
3 medium tomatoes cut into 1/4 inch slices
10 bacon strips crumbled
1 cup shredded cheddar cheese
1 cup mayonnaise
Directions:
Bake pastry shell according to package directions and cool
Place tomatoes in the crust; sprinkle with bacon.
in a bowl, combine the cheese and mayonnaise.
Spoon over the bacon in the center of the pie, leaving 1" around edge.
Bake at 350 degrees for 30 to 40 minutes,
I feel you should cover the whole pie for the majority of the baking the directions say only the edges.
I use a convection oven so please judge for yourself,
