French Green Pea Soup With Wine

A friend on Facebook mentioned something today that made me think of this soup.
This soup is delicious and easy to make. 
This soup is what I made:

Ingredients:

2½ Cups of frozen green peas
1¼ Cup of heavy cream
1 Tablespoon of  butter
1/2 Cup of white wine
1 Shallot, finely chopped
1 Cup of chicken stock
Salt and white pepper

Instructions:

1. Saute the shallots in half of the butter in a large sauce pan until soft but not browned.
2 Add the wine and boil until reduced by about a third.
3. Add the vegetable stock and the peas and simmer for 3 minutes.
4 Pour in the cream, simmer for another 2 minutes
5.  then blend until very smooth using a hand blender or a food processor.
6. Pass through a sieve.
7. Whisk in the rest of the butter, and season with salt and white pepper.

If you don't have shallots you can use onions but I really like the shallots in this delicate soup.

I'd like to top my soup with croutons and a little parsley.  You can cut this soup in half if there's only two of you, but I'd like to make the four person serving because I know I want one more cup the next day!
