Panazanella Salad With Capers
One of my favorite salads is panzanella. Which is basically a bread salad.
The history of the salad goes back a thousand years or more.
Here is how it's made:
Ingredients:
Green peppers
red onion
Celery
Cucumbers
Capers
Red wine or balsamic vinegar
olive oil
Fresh basil
Salt and pepper to taste
Bread
Grated cheese ( Italian, feta, you chose the cheese you like)
Salad:
1. Start the salad by taking a slightly stale bread in slice into Crouton size pieces
Place the bread pieces on a cookie sheet and lightly apply some olive oil.
Place in the oven at 250 degrees for 20 to 25 minutes.
2. The combine all the vegetables.
Slice the tomatoes
Chop cucumbers after removing the seeds
Slice the green pepper
Add a tablespoon of capers ( capers are berries found in Mediterranean countries)
Chiffonade a few leaves of Basil ( chiffonade means take some leaves roll them together then slice making them strips of Basil)
Mix together.
Add toasted bread toss with the salad dressing.
Then top with the cheese. Toss the cheese with the salad when you are ready to serve
Next make the salad dressing:
Salad dressing
1/2 cup oil
2 tablespoon vinager
Salt and pepper
1/2 teas italian seasoning
Lightly pour the dressing over the salad and toss.
Place the salad in the refrigerator and allow to marinate for 1 hour.
Thats it now just enjoy!
