Vegetable Casarole

Yesterday two friends and I went to an outdoor vegetable stand and I bought some wonderful vegetables, including three squashes and one potato.
I don't buy more than I I'm going to use within that week.
I saw a similar casserole on Facebook but it was too large for one person and I wanted to add all three squashes so I came up with my own version it's just enough for one or two people
Here is the recipe:

Vegetable Casarole

Ingredients:

1  medium potatoes (any kind)
1/2 medium yellow squash
1/2  medium green zucchini
Mexican squash
1 medium tomato
1 medium yellow onion
1 cup of cheese (your choice) ( I use Mexican)
3 cloves garlic
1 tbsp olive oil
Rosemary
Garlic
Salt & Pepper

Directions:

Preheat oven to 400 degrees. Finely dice the onion and mince the garlic. Saute both in a skillet with olive oil until softened. While the onions are cooking, thinly slice the vegetables. Spray the inside of an 8x8 square or round baking dish with non-stick spray. Spread the sauteed onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish. Sprinkle generously with salt, pepper, and rosemary.
Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown.
