Chicken Salad
2 cooked chicken breast cut up fine
Juice from chicken
1 celery stalk chopped ( I only use celery heats. They are less strongy)
1 small apple chopped ( leave peel on)
15 whole pecans chopped
2 heaping tablespoons of hellman's Mayo
Salt and pepper to taste
In a big bowl cut up your chicken... add your celery, apples and pecans, add your mayo salt and pepper and mix well.
I found this recipe online and I made a couple changes.
I don't peel the apple I leave the skin on because that's where the flavor is not to mention the vitamins.
I cooked two boneless chicken breasts, not one, I wrapped then in foil and seasoned with a little seasoned salt and a little bit of dry Italian seasoning,
like Good Seasons.
I made the rest of the salad and when the chicken was done I cut it up in added it to the salad but I also added the juice that came out of the chicken.
it lightened up the mayonnaise and added more flavor.
Tonight I will serve the salad on top of a green salad should be so good!
The salad is truly delicious enjoy!
