Sweet & Sour Chicken
The other day my neighbor brought over a small quantity of pineapple in Juice.
I just happened to have cooked two chicken thighs in my slow cooker.
Then I had a thought why don't I use them together and that is whem I went in search of a sweet and sour chicken recipe.
It took less than a minute to come up with one that sounded good and was affordable.
Here is the recipe I derived from the one I found:
2 boneless chicken breasts or thighs sliced into strips
Salt and pepper
1/2 cup chopped red pepper
1/2 cup green peppers
1/2; cup chopped onions
4 teaspoons cornstarch, mixed with 4 teaspoons water
1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
3 tablespoons light brown sugar
3 tablespoons wine vinegar
1/4 cup chicken stock
Cooked rice, for serving

Here is where I make a drastic departure from the original recipe.
I try really hard to make my meals as healthy as I can.
I cooked the chicken in the slow cooker and save the broth when it was cooked I shredded the chicken, I put the broth aside to use later.
The parts of the chicken you use is up to you. I like the thighs and legs because they're dark meat and they have a lot more flavor . You may prefer the chicken breast which is your choice.
After I shredded the chicken I set the chicken aside.
I then put a little bit of the broth into a pan
then I used a cup and a half of the onion and pepper Frozen stir fry from the Dollar Tree . If you prefer fresh, use fresh that's up to you.
I then stirred in the pineapple chunks, juice, sugar, vinegar and chicken stock and brough it to a simmer.
I simmer until sauce begins to reduce. Then stir in cornstarch mixture and brough the liquid to a simmer once again.
Then I stirred in the chicken and cook for 5 minutes
Serve over rice.
The important ingredients in this recipe I believe is the red wine vinegar mixed with the light brown sugar it truly makes a difference so please only use the red wine vinegar.
This recipe made my way was a little less than a dollar per serving.
I really like sweet and sour chicken and I think this is probably the best one I have ever made!
