Today was a busy day but I still have to make dinner and it had to be easy.
I decided to use some odds and ends that had to be used up.
I had a small ham and put that in the crock pot with some leftover glaze I had left over from a previous ham that I had in the freezer.
Next I had a little leftover ricotta cheese and had plenty of other cheese to make a au gratin potatoes.
I wasn't going to fuss. I made a quick rue in a pan, then added milk. I turned off the heat under the pan and added the cheese.
I'm lucky that I have a hand slicer that makes perfect size potatoes slices for the
Potato au gratin. I sliced some onions assembled and put the au gratin potatoes in the oven at 400. I would put the all gratin potatoes in early just in case the potatoes are hard and you have to cook a little longer to get them to the right consistency.
Then I had some apples that were just too hard for me to enjoy eating, so they became a really quick applesauce.
I peeled, cored, and sliced 7 apples. Then I put them in a microwave safe Bowl. To the apples I added a pinch of nutmeg a half a teaspoon of cinnamon and 6 tablespoons of sugar.(4 if using brow sugar) Then I covered the bowl and microwaved for 25 minutes.
Dinner was on in less than 20 minutes pro time and late I enjoyed a delicious ham dinner.
