Zuppa Toscana ( The Soup Of Tuscany)




  The Soup Of Tuscany (Zuppa Toscana)




Ingredients

1 pound Italian sausage (spicy)2  potatoes, cut into bite-sized cubes
1 onion, chopped
2 tablespoons garlic, minced
2 carrots chopped
2 stalks celery chopped
1 small can of cannelloni beans (optional)
32 ounces chicken broth
1/2 can or frozen spinach (or kale), bite-sized pieces
1 cup heavy whipping cream
2 tablespoons flour
Salt and pepper to taste
Cayenne pepper to taste
1/4 cup bacon ( I use bacon bits)

Instructions

Step 1

Brown sausage  in a sauté pan.( you can use links or ground sausage)
One warning most recipes for this particular soup call for the hot sausage if you don't like really hot sausage in soup I would use the mild it certainly will be hot enough I guarantee it

Step 2

Cut links in half lengthwise, then cut slices or crumble the sausage

Step 3

Place sausage, chicken broth, potato garlic, potatoes, carrots, celery, and onion in slow cooker
. Add just enough water to cover the vegetables and meat.

Step 4

Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.

Step 5

30 minutes before serving:

Step 6

Mix flour into cream removing lumps.

Step 7

Add cream and kale to the crock pot, stir.

Step 8

Cook on high 30 minutes or until broth thickens slightly.
It is easy to cut the soup down for one or two people if you want just do half the ingredients is and it should be fine.

The traditional way to serve the soup is the serve it over crusty Tuscan bread and top it with bacon crumble and a little parmesan cheese if you like.
This really is a really really easy soup to make.
