MUSHROOM ALFREDO & Stuffed Shells
INGREDIENTS:
1 (10 3/4ounce) can cream of mushroom soup
1/2: cup milk
1/2 teaspoon Italian spices
1/4 cup parmesan cheese
1 clove garlic, minced
2 tablespoons parsley, chopped
4 large mushrooms sliced.
Then you will need:
30 cooked Conchiglie Shells. Translated mean seahorse they are just large shells for stuffing.
Filling for shells:
The Filling is up to you I had left over ricotta all ready mixed from the other day and needed to use it up before it went bad.
My suggestion is if you're using ricotta cheese then make sure you add an egg to the mixture so we can firm up inside the shells.
If you don't get the stick to the cheese just because I did meatball mixture is really good ground beef it's up to you it's your imagination your taste buds use what you think you'll enjoy
Directions:
The first thing I did was boil some water with a teaspoon salt to cook the shells.
I allowed the shells to boil for 14 minutes until they were al dente.
Then I took them out and rinse them well and separated them on my cutting board
While the shells were cooking I made a very easy mushroom and Parmesan alfredo sauce:

I cooked the sauce while the shells were cooking
I allowed the shells to cool a bit so they would be easy to handle
Then I took a teaspoon of the ricotta and stuffed the shells.
Yes it's a little messy but then you get to lick your fingers later and it tastes good!
After you finish stuffing the shells place them in a large enough pan so each shell can be upright then cover with the sauce.
(I used a lasagna pan)
Once the mushroom sauce has been put over the shells sprinkle some more parmesan on top.
Place the shells in oven 350 for 35 minutes.
After taking them out of the oven allow them to cool for a few minutes meanwhile make a nice tossed salad and I suggest something like red wine dressing they give that acid that the meal will need.
This meal will take a little time but it's a traditional Italian meal that I'm sure everyone can enjoy.
If it looks like a couple of shells are missing you would be right.
Well it was waiting to take the photograph I was munching on the shells. I could not believe they using soup that I could turn it into an alfredo sauce but believe it or not it does not taste like soup it tastes like a nice rich alfredo sauce!
