Crockpot Cheeseburger Soup
Ingredients:
1 1/2 cups chicken broth
1
peeled and diced potatoes
1/2 cup diced onion
1/4 cup diced carrot
1 cloves garlic, minced
1/4 spoon Cajun seasoning
Salt and pepper
1/2 lb ground beef
1/8 cup corn starch
1/2 cup 2% milk
1/2 lb processed cheese (aka Velveeta)
Toppers: shredded cheddar, diced pickles, ketchup, mustard
INSTRUCTIONS:
1. Cook the ground beef over medium-high heat in a skillet, breaking it up as it cooks.
2. Take the ground beef out of the frying pan and put the potatoes carrots and onions in the broth from the ground beef for about five minutes. It gives the vegetables a start and adds great flavor that you couldn't get any other way.
Season to taste with salt and pepper and Cajun seasoning.
Then put in crockpot.
3. Before putting the ground beef to the Crock-Pot put it back in the frying pan and mix 2 tablespoons of cornstarch into a half a cup of milk to create a slurry then add it to the ground beef. Elope of slurry to thicken a little then add to the Crock-Pot
4. Add the chicken broth and cubed cheese.
5. Stir all the ingredients in the Crock-Pot to make sure it's well Blended.
6. Allow the soup to cook for 3 or 4 hours on low.
7. For the first hour hour, stir once or twice, until the cheese is melted.
Serve the soup hot topped with diced pickles and ketchup and mustard, if desired.
The Cajun spice is your choice to add.
I like the special flavor it adds.
I didn't have already Blended cajun spice on hand so I made it myself after I looked up what to put in. Here's the recipe for it if you'd like to to make your own.
Cajun spice includes equal amounts of the following:
salt,
garlic powder,
paprika,
black pepper,
onion powder,
cayenne pepper
oregano,
thyme,
red pepper flakes
