I was raised in New York but my family tradition's are rooted in the South where a lot of my family still resides.
One of the traditions my family had was to eat Hoppin Johns on New Year's Day.
We believed If you want good luck in the New Year, then you need this Southern recipe of Hoppin' john's.
My recipe is vegetarian but there are many out there that include pork and other types of meat since we use it as a side dish and just for luck I make a vegetarian version of it.
Here's the recipe and it's simple and quick:
Ingredients :
1 1/4 cups vegetable or chicken broth
1/2 cup long grain rice
1 tablespoons olive oil
1/2 onion, chopped
1/2 cup red or green bell pepper
1 stalk celery
1 (15 ounce) cans black-eyed peas, rinsed and drained
1/4 teaspoon Cajun seasoning
Directions:
Bring broth and rice to a boil in a saucepan.
Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
Heat olive oil in a pot over medium-high heat.
Saute onion in hot oil until translucent, 5 to 7 minutes.
Stir rice, black-eyed peas, and Cajun seasoning into onion, cover the pot with a lid, and cook until flavors blend, about 10 minutes.
