Sour Cream Noodle Bake


I had taken a friend to the doctors and while I was waiting the program "Pioneer Woman" came on the television at the office had in the waiting room.
She made this sour cream noodle bake.
It sounded so good I had to make this for dinner but the recipe  had to be cut down.
It took some time but I was able to cut it down so it was a nice dinner for two people and that's the recipe you see here.

Ingredients:

3/4 pound ground chuck

1 cup tomato sauce

1/4 teaspoon salt

Freshly ground black pepper

4 ounces egg noodles (cooked)

1/4 cup sour cream
1 cup shredded cheddar cheese
1/4 cup Parmesan cheese

3/4 cup small curd cottage cheese

Pinch red pepper flakes

1/4 cup grated onions or onion flakes

Crusty French bread, for serving

Directions:

Preheat the oven to 350 degrees F.

Brown the ground chuck in a large skillet.
Drain the fat,
 then add the tomato sauce, 1/4 teaspoon salt and plenty of freshly ground black pepper.
Stir, and then simmer while you prepare the other ingredients.
Cook the egg noodles until al dente. Drain and set aside.
In a medium bowl, combine the sour cream, Parmesan cheese, and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted,  from 20 to 30  minutes.

Serve with crusty French bread.
