Crock Pot Scalloped Tomatoes and Corn
Ingredients:
1 can (15 oz) creamed_style corn
1 can 14 oz) diced tomatoes
3/4 cup saltine or soda cracker crumbs
1 egg slightly beaten
2 teaspoons of sugar
3/4 teaspoon black pepper
fresh chopped tomatoes & parsley (optional)
Directions:
1.Combine all the ingredients in crock pot
Eccept the crushed crackers.
2. cover and cook on low for 4 to 6 hours
.
Then put in oven with cracker crumbs sprinkled on top at 450 for 10 mins if you want a crispy top
3. When ready to serve top with the fresh tomatoes and parsley before serving
I think you will like this as much as I do if you like tomatoes and corn!
