Harvard Beets


These are so delicious! I like them so much I could eat them for dessert!

Unfortunately it's become newly impossible to buy them at the store any longer and when you find them they're way too expensive.

If you love them as much as I do here's the recipe and it's good with both canned beets and fresh.

 Ingredients


 2 cans (16 ounces each) sliced beets

1/2 cup sugar

1 tablespoon all-purpose flour

1/2 cup white vinegar( I use cidar vinegar)

1/2 teaspoon salt

2 tablespoons  butter

canned beets, drain and reserve 1/4 cup juice.

Directions:


 Start by making a quick rue in a sauce pan 
 To make a rue  melt the butter then stir in the flour until the flour has a little color and smooth then add the remaining ingredients
The sugar, flour, vinegar and reserved beet juice. Cook over low heat until thickened. Stir in beets, salt and butter. Simmer for 20 minutes
